  • 4 salmon fillets (about 170 g each)
  • 4 medium potatoes (about 900 g)
  • 450 g broccoli florets
  • 120 g unsalted butter (1 stick)
  • 2 lemons (1 for juice, 1 for slices)
  • 4 garlic cloves (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 220°C (425°F) and prepare a large baking sheet lined with parchment paper.
  2. Wash the potatoes thoroughly and peel them if preferred. Cut the potatoes into evenly sized cubes, about 1.5 to 2 cm. In a large bowl, mix the cubed potatoes with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of paprika.
  3. Spread the seasoned potatoes on one side of the prepared baking sheet in a single layer. Roast the potatoes in the preheated oven for 25 minutes, turning them halfway through to ensure even browning.
  4. While the potatoes are roasting, melt the 120 g of unsalted butter in a medium saucepan over medium heat. Add the 4 chopped garlic cloves and sauté for 1-2 minutes until fragrant. Remove from heat and stir in the juice of one lemon, seasoning with salt and pepper to taste.
  5. After the potatoes have roasted for about 15 minutes, remove the baking sheet from the oven. Move the potatoes to one side of the sheet to make room for the salmon. Season the 4 salmon fillets generously with salt and pepper and place them on the empty side.
  6. Spoon the prepared lemon butter mixture generously over the salmon fillets and place lemon slices on top. Add the 450 g of broccoli florets to the remaining space on the baking sheet, drizzling lightly with olive oil and seasoning with salt and pepper.
  7. Return the baking sheet to the oven and roast everything together for an additional 15-20 minutes, until the salmon is opaque and flakes easily with a fork, and the broccoli is tender with crispy edges.
  8. Let the dish rest for a few minutes after removing it from the oven. Garnish with fresh parsley if desired and serve the salmon alongside the crispy potatoes and roasted broccoli.
