Instructions

  1. Prep Your Ingredients: Before you even turn on the stove, chop your onion, bell peppers, and mince your garlic. Measure out your rice, beef broth, diced tomatoes, and seasonings.
  2. Brown the Italian Sausage: Heat a large, heavy-bottomed skillet or Dutch oven with a lid over medium-high heat. Add a tablespoon of olive oil if your sausage isn't particularly fatty. Remove the casings from your Italian beef sausage (if applicable) and add the meat to the hot pan. Break it up with a spoon as it cooks. Brown the sausage thoroughly, stirring occasionally, until it's cooked through and nicely caramelized. Drain off any excess grease, leaving about a tablespoon or two in the pan.
  3. Sauté the Aromatics and Vegetables: Reduce the heat to medium. Add the chopped onion and bell peppers to the pan with the cooked sausage. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften. Stir in the minced garlic and tomato paste. Cook for another minute, stirring constantly, until the garlic is fragrant and the tomato paste has darkened slightly.
  4. Add Rice and Liquids: Stir the uncooked long-grain white rice into the pan, ensuring it’s coated with the sausage and vegetable mixture. Cook for about 1 minute, stirring occasionally, to lightly toast the rice. Pour in the undrained diced tomatoes and the beef broth. Add your Italian seasoning, dried oregano, salt, pepper, and red pepper flakes (if using). Give everything a good stir to combine.
  5. Simmer and Cook the Rice: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet tightly with a lid, and let it simmer undisturbed for 18-20 minutes. Do not lift the lid during this time!
