Crispy Potato Wedges with Fresh Cucumber Dip

  • 3 tablespoons olive oil
  • 1 teaspoon paprika (smoked or sweet, according to preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: Fresh herbs (parsley or chives) for garnish
  • 1 medium cucumber
  • 200 g (7 oz) Greek yogurt (or sour cream)
  • 1 tablespoon mayonnaise
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 220°C (428°F) to ensure the potato wedges become crispy.
  2. Peel the potatoes and cut them into even wedges, about 1.5 cm thick, ensuring they are all roughly the same size for even cooking.
  3. Place the potato wedges in a large bowl and add the olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper. Mix well to ensure the spices are evenly distributed.
  4. Lay the seasoned potato wedges on a baking sheet lined with parchment paper, making sure they do not overlap to achieve maximum crispiness.
  5. Bake the potato wedges for about 30-35 minutes, until they are golden brown and crispy. Flip them halfway through the baking time for even browning.
  6. While the potatoes are in the oven, prepare the cucumber dip. Cut the cucumber into small pieces and mix it in a bowl with the Greek yogurt, mayonnaise, dill, garlic, lemon juice, and salt and pepper. Stir everything well.
  7. After 30-35 minutes, when the potato wedges are crispy, remove them from the oven and let them cool slightly. Optionally, garnish with fresh herbs.
  8. Serve the potato wedges warm alongside the cucumber dip. Enjoy the combination of crispy potatoes and refreshing dip!
